Preparing the Christmas ham

It’s Christmas morning and I am at my aunts and uncle’s house watching them prepare the glazed Christmas ham. It’s one of their traditional contributions to the extended family Christmas lunch.
We have a large family, (60 + expected at my aunt Moira’s for lunch today) so the ham is also on a suitably grand scale (just on 10 kg).

The recipe is tried and proven but, alas, a family secret. I can tell you the ham Baking the hamcurrently baking in the oven has been basted in honey, dark brown sugar, brandy, two types of mustard and is studded with cloves. And it smells fabulous!
